Tumis Buncis Tahu Pedas ala Mejikom

Ingredients

Buncis (green beans) 100 grams
Tahu putih (tofu) 5 pieces
Tomat kecil (small tomato) 1 piece
Bawang merah (red onion) 3 cloves
Bawang putih (garlic) 2 cloves
Cabe ijo (green chili) 5 pieces
Cabe merah keriting (red curly chili) 5 pieces
Cabe setan (bird’s eye chili) 4 pieces
Royco ayam (chicken seasoning) to taste
Garam (salt) to taste
Gula (sugar) to taste
Kecap (soy sauce) to taste
Air matang (boiled water) as needed
Minyak goreng (cooking oil) for frying

Instructions

  1. Prepare the Mejikom: Start by heating your Mejikom and set it to COOK. Allow it to warm up slightly before adding a bit of cooking oil.

  2. Prepare the Tofu: Cut the tofu into small cubes. Once the Mejikom is hot, add the tofu and fry until it becomes slightly dry and golden.

  3. Chop the Vegetables: While the tofu is frying, chop the green beans, slice the red onion and garlic, and thinly slice the chilies and tomato. Set these aside.

  4. Sauté Aromatics: After the tofu is done, remove it from the Mejikom. In the same pot, add the chopped red onion and garlic. Sauté until fragrant.

  5. Add Chilies and Tomato: Add the sliced chilies and tomato to the aromatics. Cook until they are soft and aromatic.

  6. Incorporate Green Beans: Add the chopped green beans and a splash of boiled water. Cover and let it cook until the beans are tender.

  7. Season the Dish: Once the green beans are cooked, add the soy sauce, salt, sugar, and Royco seasoning to taste. Mix well.

  8. Combine with Tofu: Finally, add the fried tofu back into the Mejikom. Stir everything together, cover, and let it simmer for a few moments to allow the flavors to meld.

  9. Serve: Garnish with fried shallots for an added crunch, and serve hot alongside rice or as a standalone dish.
