Ingredients

Hard-boiled eggs 4 pieces
Firm tofu (fried) 1 block
Red shallots 4 cloves
Garlic 4 cloves
Ginger A small piece
Galangal A small piece
Lemongrass 1 stalk
Green onions 2 stalks (sliced)
Sugar To taste
Salt To taste
Fried shallots For garnish
Kaffir lime leaves 2-3 leaves
Coconut milk 1 cup

Instructions

  1. Prepare the Ingredients: Begin by boiling the eggs until hard, then set aside to cool. Fry the tofu until golden brown, then cut into cubes.

  2. Blend the Spices: In a blender, combine red shallots, garlic, ginger, galangal, and kaffir lime leaves, blending until smooth. Leave the lemongrass whole.

  3. Sauté the Spices: Heat a pan over medium heat and add a splash of oil. Sauté the blended spices until fragrant, then add the whole lemongrass stalk.

  4. Combine Ingredients: Gently add the boiled eggs and fried tofu into the pan. Pour in a little water to create a sauce, allowing it to heat through.
