- Add the chopped onion and sauté until translucent, releasing its natural sweetness.
- Lower the flame slightly and incorporate the garam masala powder, frying for just a couple of seconds to enhance its aroma.
- Introduce the ground lamb to the pan, cooking until no longer pink and the moisture has evaporated; break any lumps to ensure a uniform texture.
- Mix in the ginger-garlic paste, red chili powder, and salt, continuing to fry for an additional minute to meld the flavors.
- Stir in the yogurt, allowing it to cook for 2-3 minutes while stirring occasionally for an even mixture.
- Add the chopped tomatoes, green chilies, lime juice, and coriander leaves, mixing well to combine.
- Cover the pan and let it simmer on low heat for about 15 minutes, until you see oil pooling on the surface of the curry.
- While the curry cooks, prepare the pasta according to package instructions, ensuring it’s slightly undercooked.
- Once the pasta is ready, gently mix it into the curry, allowing it to cook on the lowest flame for an additional 5-10 minutes, ensuring the dish remains saucy.
