Preheat the Oven: Begin by preheating your oven to 200°C (425°F) to ensure it’s hot enough to melt the cheese and crisp the croissants perfectly.

Prepare the Sausage: Split the sausages open and squeeze out the meat from the casings, discarding the skins for a cleaner mixture. 
- 
Cook the Sausage: In a frying pan, heat the olive oil over medium heat, then crumble in the sausage meat. Cook this for 4 to 5 minutes, stirring occasionally until it turns a lovely golden brown and slightly crispy.

Add Tomatoes: Halve the plum and cherry tomatoes, then add them to the pan. Cook for an additional 3 to 4 minutes, stirring occasionally until the tomatoes start to wilt and soften.

Season and Thicken: Sprinkle in the chili flakes and stir over the heat for about 1 minute. Then, add the crème fraîche, allowing it to cook for another 1 to 2 minutes until the mixture thickens beautifully.
