Ikan Patin: A Spicy Delight

Ingredients:

Ingredient Quantity
Patin Fish 5 pieces
Lime 1 piece
Medium Tomato 1 piece
Curly Green Chili 3 pieces (more to taste)
Bird’s Eye Chili 2 pieces (more to taste)
Lemongrass 1 stalk (smashed)
Galangal ½ inch (smashed)
Red Shallots 8 cloves
Garlic 2 cloves
Candlenuts 5 pieces
Turmeric Powder 1 tsp
Large Red Chili 1 piece
Salt To taste

Instructions:

  1. Prepare the Fish: Rinse the patin fish thoroughly and marinate it with salt and lime juice for about 15 minutes to enhance flavor and remove any fishy smell.

  2. Chop the Vegetables: Slice the tomato, curly green chili, and bird’s eye chili, and smash the galangal.

  3. Blend the Spices: In a blender, combine the red shallots, garlic, candlenuts, turmeric powder, and large red chili. Blend until smooth.

  4. Sauté the Spices: In a pan, heat some oil over medium heat. Add the blended spices along with the lemongrass, galangal, and tomato. Sauté until fragrant.

  5. Cook the Fish: Add the marinated patin fish to the pan, stirring gently to coat it in the spice mixture. Pour in 250 ml of water, stirring to combine. Allow it to simmer until the water reduces and the spices penetrate the fish.

  6. Season: Taste and adjust salt as needed.

  7. Serve: Remove from heat and serve hot, accompanied by steamed rice or your favorite side dishes. Enjoy the ultimate flavor explosion!

This Ikan Patin recipe offers a perfect balance of spices and freshness, making it a delightful addition to your culinary repertoire. Happy cooking!
