Sauté Aromatics
Heat a bit of oil in a pan. Add the sliced shallots, garlic, onion, and bird’s eye chilies. Sauté the ingredients over medium heat until fragrant and softened. -
Add Water and Seasonings
Pour 150-200 ml of water into the pan, and add the oyster sauce, sweet soy sauce, salt, sugar, and pepper to taste. Stir the mixture to combine and allow it to simmer for a few minutes. -
Incorporate Fried Tofu
Add the fried tofu cubes into the pan. Stir gently to coat the tofu with the sauce. Let it cook for a few more minutes to allow the tofu to absorb the flavors. -
Cook the Vegetables
Once the tofu is well coated, add the bean sprouts and scallions. Stir everything together until the vegetables are evenly distributed. Cook for another 2-3 minutes, just until the bean sprouts are tender but still crisp. -
Adjust Consistency
If you prefer a more soupy consistency, you can add a bit more water to the pan at this point. Stir and cook for an additional minute. -
Serve
Remove from heat and transfer the dish to a serving plate. Serve immediately, while hot, with steamed rice for a complete meal.
