Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 10 or 11-inch tart pan with a removable bottom by buttering it generously.

  2. Make the Pastry: In a large mixing bowl, cream together the butter and sugar until light and fluffy. Incorporate the chopped walnuts into the mixture, then blend in the egg and almond extract. Gradually stir in the all-purpose flour until the mixture is completely combined. Press the pastry dough into the bottom and up the sides of the prepared tart pan. Refrigerate for 30 minutes to firm up.

  3. Bake the Pastry: Once chilled, bake the tart shell in the preheated oven for 15 to 20 minutes or until it turns golden brown. Remove from the oven and allow it to cool to room temperature.

  4. Prepare the Custard: In a medium bowl, whisk together the egg yolks, 1/2 cup of sugar, cornstarch, and vanilla extract until the mixture is pale and thick. In a medium saucepan, heat the milk over medium heat until it is just about to boil. Gradually beat the hot milk into the yolk mixture until smooth. Return this mixture to the saucepan and whisk over medium heat until it becomes very thick, approximately 5 minutes. Transfer the custard back to the bowl and incorporate the butter one tablespoon at a time, ensuring each piece melts before adding the next. Continue beating until the mixture is cool, then refrigerate until chilled.
