All-purpose flour (enough to coat tofu) To taste
Cornstarch 1-2 tablespoons
Ground pepper To taste
Salt Approximately 1/2 tablespoon
Ground coriander To taste
For the sautéed mixture:
Shallots 2 cloves
Garlic 6 cloves
Onion (yellow or white) 1/4 onion
Bird’s eye chilies To taste
Large green chilies 3 pieces
Curly green chilies 5 pieces
Curly red chilies 5 pieces
Green onions (scallions) 2 stalks
Salt To taste
Ground pepper To taste
Mushroom seasoning (optional) To taste

Instructions

  1. Prepare the Tofu:
In a mixing bowl, combine the all-purpose flour, cornstarch, ground pepper, ground coriander, and salt. Stir until well blended. Add the cubed tofu to the bowl and gently toss to ensure each piece is evenly coated with the flour mixture.

  2. Fry the Tofu:
Heat a generous amount of oil in a frying pan over medium heat. Once the oil is hot, carefully add the coated tofu cubes. Fry the tofu until it turns golden brown and crispy, about 5-7 minutes. Ensure that all sides are cooked evenly. Once done, remove the tofu from the oil and let it drain on paper towels.

  3. Sauté the Vegetables:
In the same pan, remove excess oil, leaving just enough to sauté the vegetables. Add the sliced shallots, garlic, and onions, and stir-fry for a couple of minutes until fragrant. Incorporate the bird’s eye chilies, large green chilies, curly green chilies, and curly red chilies, cooking for another 2-3 minutes until the vegetables are tender yet vibrant.

  4. Combine and Season:
Add the fried tofu back into the pan with the sautéed vegetables. Season with additional salt, ground pepper, and mushroom seasoning to taste. Stir gently to combine all ingredients thoroughly, ensuring that the tofu is well coated with the spices and flavors.

  5. Final Touches:
Finish by adding the sliced green onions for a fresh touch. Taste and adjust seasoning as necessary. Once everything is heated through and well mixed, remove from heat.

  6. Serve:
Transfer the Tahu Cabe Garam to a serving platter and enjoy this dish hot as an appetizer or as a delightful accompaniment to steamed rice.
