Lumpia Tahu (Tofu Spring Rolls)

Ingredients

Large tofu (preferably Jombang) 1 piece
Bean sprouts To taste
Carrots, julienned To taste
Leek, finely chopped 1 piece
Garlic, minced 2 cloves
Shallots, minced 4 cloves
Spring roll wrappers 1 pack
Celery, finely chopped To taste
Green onions, finely chopped To taste
Granulated sugar 1 tablespoon
Salt ½ teaspoon
Pepper ¼ teaspoon
Sweet soy sauce To taste
Oil for frying As needed
Egg white (for sealing) 1 piece

Instructions

  1. Prepare the Tofu: Cut the tofu into small cubes and fry until golden brown. Drain and set aside.

  2. Sauté Aromatics: In a pan, sauté the minced garlic, shallots, and chopped leek until fragrant and translucent.

  3. Mix the Filling: Add the fried tofu, bean sprouts, julienned carrots, and the remaining seasonings to the pan. Stir well and taste for seasoning; adjust as necessary. Allow the mixture to cool.

  4. Assemble the Spring Rolls: Lay out a spring roll wrapper on a clean surface. Place a spoonful of the filling near one edge, then fold and roll tightly, sealing the edge with egg white. Repeat until all filling is used.

  5. Fry the Lumpia: In a deep pan, heat oil over medium heat. Fry the spring rolls until golden brown and crispy. Remove and drain on paper towels.

  6. Serve: Enjoy your Lumpia Tahu hot, served with a side of tauco sauce, chopped green onions, and sliced chili for an added kick.
