Tomato 1
Sweet soy sauce (kecap manis) 2 tablespoons

Instructions

  1. Prepare the Ingredients
Gather all the ingredients and chop the tempeh and tofu into pieces according to your preference. Set them aside for later use.

  2. Boil the Eggs
In a pot, place the eggs and cover them with water. Bring to a boil and cook until hard-boiled. Once done, remove from heat, let cool, and peel the eggs.

  3. Make the Spice Paste
In a mortar and pestle (or a blender if you prefer), grind the shallot, garlic, and bird’s eye chili together until smooth. The traditional method of using a mortar and pestle will enhance the flavors, but blending is a quick alternative.

  4. Fry the Ingredients
Heat oil in a frying pan over medium heat. Carefully fry the tempeh and tofu until golden brown, then fry the boiled eggs just until the skin is slightly crispy. Drain on paper towels to remove excess oil.

  5. Sauté the Spices
In the same pan, add the ground spice paste along with the instant Bali spice mix. Sauté until fragrant, which should take about 2-3 minutes.

  6. Add Aromatics
Toss in the lemongrass, ginger, galangal, and bay leaves. Continue to sauté until the aromas are released, approximately 2 more minutes.

  7. Combine with Fried Ingredients
Add the fried tempeh, tofu, and eggs into the sautéed spices. Stir gently to coat the ingredients evenly with the spice mixture.

  8. Simmer with Water
Pour in approximately 2 cups of water, mixing well. Then, add the chopped tomato. Season with salt, sugar, white pepper, and chicken flavor powder to your liking.

  9. Finish with Sweet Soy Sauce
Drizzle in the sweet soy sauce, adjusting the amount according to your taste preferences. Allow the mixture to simmer until the liquid reduces and thickens, making sure to stir occasionally.

  10. Serve and Enjoy
Once the sauce has thickened and the flavors melded beautifully, remove from heat. Serve hot over steamed rice and with crispy crackers on the side for an added crunch. This dish is not only delicious but also a feast for the senses—enjoy every bite!

This delightful recipe, infused with the essence of Bali, is perfect for breaking your fast or any family gathering. Happy cooking and enjoy your culinary adventure!
