Instructions
-
Prepare the Tempe: Slice the tempe into small pieces and set aside.
-
Crush Garlic: Crush 2 cloves of garlic and set aside.
-
Boil Chicken: In a pot, bring sufficient water to a boil. Add the crushed garlic, salt, and ground pepper. Once boiling, add the chicken thighs and cook until tender. Remove and set aside.
-
Prepare Coating: In two separate bowls, prepare the chicken seasoning. In one bowl, mix the Sasa flour with water to create a wet batter. In the other, keep the dry seasoning. Dip the boiled chicken into the dry flour, then into the wet batter, and back into the dry flour to coat. Repeat the same process for the tempe.
-
Fry Chicken and Tempe: Heat oil in a pan and fry the chicken and tempe until golden brown and crispy.
-
Make the Sambal: In a mortar or using a chopper, coarsely grind the red chilies, shallots, and garlic. Heat oil in a pan, add the ground mixture, and sauté until fragrant. Add a little water, salt, and sugar, cooking until the sambal is well-combined and fragrant.
-
Prepare for Baking: Preheat your oven. On a baking tray, arrange the fried chicken and tempe. Top them generously with the sambal.
-
Add Cheese: Grate the melted cheese over the chicken and tempe.
-
Bake: Place in the oven and bake until the cheese is melted and bubbly.
