Prepare the Spice Paste:
Start by preparing the spice mix. Peel and chop the shallots and garlic. Grate the turmeric and candlenut (kemiri). Combine the shallots, garlic, turmeric, ground coriander, candlenut, sugar, and salt in a mortar and pestle. Grind everything together until you achieve a smooth paste. -
Make the Batter:
Add a little water to the spice paste and stir well. Gradually mix in the all-purpose flour and rice flour until you get a smooth batter. The batter should be thick but easy to coat the tempe slices. Adjust with more water if necessary. -
Prepare the Tempe:
Slice the tempe into thin pieces (about 1/2 cm thick). Slice the green onion into thin rings. -
Coat the Tempe:
Dip each slice of tempe into the batter, ensuring that each piece is well-coated. For added flavor and crunch, you can also sprinkle the thin green onion slices on top of the batter-coated tempe. -
Fry the Tempe:
Heat oil in a frying pan over medium-high heat. Once the oil is hot, carefully place the battered tempe slices into the oil. Fry until golden brown and crispy on both sides, about 2-3 minutes per side. -
Serve:
Once the tempe is crispy and golden, remove from the oil and drain excess oil on paper towels. Serve immediately while still hot for the best flavor and texture.
