Bali Tahu Telur Recipe

Ingredients

Spices:
8 cloves Red Shallots
3 cloves Garlic
6 Red Chilies
4 Bird’s Eye Chilies
1 piece Ginger
1 piece Turmeric
1 piece Galangal

3 leaves Kaffir Lime Leaves
2 pieces Green Onions
1 teaspoon Shrimp Paste
1 teaspoon Granulated Sugar

To taste Palm Sugar

Instructions

  1. Boil and Prepare Eggs: Start by boiling the eggs until fully cooked. Once boiled, peel them, briefly fry in oil until golden, and set aside.

  2. Fry Tofu: Heat oil in a pan and fry the small tofu pieces until they are crispy. Remove and set aside.

  3. Blend Spices: Use a mortar and pestle or a blender to grind the red shallots, garlic, red chilies, bird’s eye chilies, ginger, turmeric, and galangal into a smooth paste.

  4. Prepare Herbs: Tear the kaffir lime leaves into small pieces and chop the green onions roughly.

  5. Sauté Spices: In the same pan, heat a little oil and sauté the ground spice mixture until fragrant and the color changes.

  6. Combine Ingredients: Add the torn kaffir lime leaves, granulated sugar, palm sugar, and the shrimp paste to the pan, stirring well.

  7. Add Eggs and Tofu: Once the spices are well combined and the moisture reduces, add the fried eggs and tofu. If the mixture seems dry, add a little water as needed.

  8. Final Touches: Stir thoroughly to combine all ingredients and adjust the seasoning to your taste.

  9. Serve: Once everything is well mixed and heated through, serve your Bali Tahu Telur warm and enjoy!
