For Soup Spice Blend:
Red Shallots 5 cloves
Garlic 4 cloves
Pepper to taste
Salt to taste

For Sambal:
Sweet Soy Sauce to taste
Chili to taste
Lime Juice to taste
For Ungkep Spice Blend:
Garlic 5 cloves
Coriander to taste
Galangal, Turmeric to taste
Lemongrass 1 stalk
Kaffir Lime Leaves 2 leaves
Chicken, Tofu, Tempeh 200g each

Instructions

  1. Prepare the Vegetables: Wash all the vegetables thoroughly, chop them into bite-sized pieces, and place them in a pot filled with water.

  2. Cook the Soup: While waiting for the water to boil, blend the red shallots, garlic, pepper, salt, and flavor enhancer until smooth. Once the water is boiling, add the spice blend, chopped sausages, and chicken meatballs to the pot.

  3. Sauté the Seasoning: In a separate pan, sauté the remaining spices and parsley until fragrant, then add this mixture to the pot. Stir well, season with salt and flavor enhancer to taste, and let it simmer until the vegetables are tender.

  4. Prepare the Ungkep: For the Ayam Tahu Tempe Ungkep, blend the garlic, coriander, galangal, turmeric, lemongrass, and kaffir lime leaves until smooth. Rub this spice mixture generously over the chicken, tofu, and tempeh, ensuring they’re well-coated.
