Stir-Fried Bok Choy with Tempeh in Oyster Sauce
Ingredients:

Instructions:

Blanch the Bok Choy: Begin by bringing a pot of water to a boil. Blanch the bok choy for about 4 minutes (adjust based on the size; small heads may only need 2 minutes). Once cooked, drain and set aside.

Prepare the Tempeh Mixture: In a skillet, heat a splash of oil over medium heat and sauté the minced garlic until fragrant. Add the diced tempeh and stir-fry for a few minutes until lightly golden.
