Description:
Delight in the rich flavors of Pepes Intip Tahu, a traditional Indonesian dish that combines the creaminess of tofu with aromatic spices and mushrooms, all wrapped in fragrant banana leaves for a truly authentic experience.

Ingredients

Ingredient Quantity
Tofu (kerak tahu) 100 g
Egg (telur) 1
Straw mushrooms (jamur merang) 100 g, shredded
Bird’s eye chilies (cabe rawit) 10, chopped
Red chilies (cabe merah) 2, sliced
Shallots (bawang merah) 3, minced
Garlic (bawang putih) 3 cloves, minced
Cooking oil (minyak jelantah) 2 tbsp
Salt (garam) to taste
Sugar (gula) to taste
Seasoning (penyedap) to taste
Green onions (daun bawang) 2 stalks, chopped

Instructions

  1. Prepare the Mixture: In a mixing bowl, combine the tofu, egg, shredded straw mushrooms, chopped chilies, minced shallots, minced garlic, cooking oil, salt, sugar, seasoning, and chopped green onions. Mix thoroughly until all ingredients are well incorporated.

  2. Wrap the Mixture: Take banana leaves and use them to wrap the mixture securely, then fasten the wraps with toothpicks to ensure they hold their shape.

  3. Cook the Pepes: Heat a frying pan over medium heat and add a small amount of oil. Place the wrapped pepes in the pan, making sure to turn them occasionally to prevent burning. Cover the pan with a lid and cook until the banana leaves are dry and no moisture seeps out of the wraps.

  4. Serve: Once cooked, carefully remove the pepes from the pan. Allow them to cool slightly before serving. Enjoy your Pepes Intip Tahu as a flavorful appetizer or side dish!
