Ingredients

Ingredient Quantity
Spinach (Bayam) 1 bunch
Long Beans (Kacang Panjang) As desired
Bean Sprouts (Touge) As desired
Cucumber (Mentimun) 1 piece
Peanuts (for sambal pecel) 1/4 cup
Red Chili Peppers (Cabe Merah) To taste (adjust for spiciness)
Bird’s Eye Chili (Cabe Rawit) To taste (adjust for spiciness)
Kaffir Lime Leaves (Daun Jeruk) 2 leaves
Garlic (Bawang Putih) 3 cloves
Tamarind (Asem Jawa) 1 piece
Ginger (Jahe) A small piece
For Mendoan
Tempeh 1 package
Green Onions (Daun Bawang) 2 stalks
Garlic (Bawang Putih) To taste
All-Purpose Flour (Tepung Terigu) As needed
Royko (seasoning) A pinch

Instructions

  1. Prepare the Sambal Pecel: Start by frying the peanuts in a pan until they turn a reddish color, being careful not to burn them. Allow the peanuts to cool, then either pound them until smooth or blend for ease. Transfer the crushed peanuts to a bowl.

  2. Make the Spice Paste: In the same manner, pound the garlic, red chilies, bird’s eye chilies, kaffir lime leaves, tamarind, salt, ginger, and palm sugar until smooth. Combine this mixture with the crushed peanuts, continuing to pound until well integrated. Set aside to let the flavors meld.

  3. Cook the Vegetables: Boil the spinach and long beans until tender. Dice the cucumber into small cubes for a refreshing garnish.

  4. Prepare the Tempe Mendoan: Slice the tempeh thinly into several pieces. Chop the green onions finely. Blend garlic with a pinch of salt and a little water to create a marinade. Coat the sliced tempeh in this marinade and let it sit for a few moments.

  5. Make the Batter: In a mixing bowl, combine the all-purpose flour with the chopped green onions, a pinch of Royko, and enough water to form a smooth batter.

  6. Fry the Tempeh: Dip the marinated tempeh slices into the batter and fry them in hot oil until golden brown and crispy. Drain on paper towels.

  7. Serve: Arrange the boiled vegetables on a plate, topped with sambal pecel, and accompany with the crispy tempeh mendoan. Enjoy your delightful and flavorful dish!

This combination of fresh vegetables and crispy tempeh mendoan, paired with the rich sambal pecel, is an ultimate treat that showcases the best of Indonesian flavors.
