Tahu Aci Pedas Manis (Spicy Sweet Tahu)

A Delightful Bandung Snack Recipe

Ingredients

Main Ingredients Quantity
Yellow tofu (tahu kuning) 6 pieces
Tapioca flour (tepung kanji) 100 grams
Egg (beaten) 1 whole
Salt and pepper To taste
Chopped green onions (daun bawang) To taste
Sauce Ingredients Quantity
Chili sauce (saus cabai) 3 tablespoons
Tomato sauce (saus tomat) 1 tablespoon
Red bird’s eye chili (cabe rawit merah) 5 pieces
Spice Blend (to be doubled) Quantity
Garlic (bawang putih) 2 cloves (to make 4)
Shallots (bawang merah) 5 cloves (to make 10)

Instructions

  1. Prepare the Mixture: Begin by mashing the yellow tofu in a bowl using a fork or spoon. Once smooth, mix in half of the spice blend (from the doubled quantity) along with the beaten egg and tapioca flour. Season with salt and pepper to taste, ensuring the mixture is cohesive but not too dense—it should be easy to shape into small balls.

  2. Cook the Tofu Balls: Bring a pot of water to a boil. Carefully drop the shaped tofu mixture into the boiling water. Cook for approximately 10 minutes, or until the balls float to the surface. Once cooked, remove them from the water and let them drain and cool.

  3. Fry the Tofu Balls: In a skillet, heat oil over medium heat. Add the drained tofu balls and fry them until they turn golden brown and crispy on the outside. Once done, remove them and place them on paper towels to absorb excess oil.

  4. Make the Sauce: In the same skillet, add the remaining spice blend and sauté until fragrant. Then, add the chili and tomato sauces, mixing well. Adjust seasoning as necessary.

  5. Combine and Serve: Gently fold the fried tofu balls into the sauce along with the chopped green onions, ensuring they are well coated. Serve warm and enjoy this delightful spicy sweet dish, perfect for snacking!

This Tahu Aci Pedas Manis is not just a treat for your taste buds but also a reflection of the rich culinary culture of Bandung. With its perfect balance of spice and sweetness, it’s sure to be a hit among family and friends. Enjoy your cooking journey!
