Pepes Tahu (Steamed Tofu)

Ingredients

Firm tofu 6-7 blocks
Garlic 3 cloves
Shallots 3 cloves
Green onions To taste
Seasoning paste 1 portion
– Garlic 2 cloves
– Kencur (aromatic ginger) 3 pieces
Salt To taste
Sugar To taste
Pepper A pinch
Bird’s eye chili (sliced) To taste

Instructions

  1. Prepare the Tofu: Start by crushing the tofu until it’s smooth. Add in the chopped shallots and mix thoroughly. Incorporate the seasoning paste, along with salt and sugar, to enhance the flavor.

  2. Wrap the Mixture: Take the seasoned tofu mixture and wrap it in banana leaves or parchment paper, ensuring it’s tightly sealed to retain moisture.

  3. Steam the Tofu: Place the wrapped tofu on a clay dish or in a steamer. Weigh it down with a mortar or similar object to ensure the mixture is compact.

  4. Cooking: Steam the wrapped tofu for about 15 minutes, flipping halfway through for even cooking.
