Tahu Bumbu: A Flavorful Indonesian Delight

Ingredients:

Ingredient Quantity
Tahu putih (firm tofu), diced 1 block
Bean sprouts, blanched 50-100 grams
Celery, finely sliced 2 stalks
Large red chili, finely sliced 1
Fried shallots 1 tablespoon
Lontong (rice cakes), optional
Cooking oil

For the Sauce:

Ingredient Quantity
Roasted peanuts 100 grams
Bird’s eye chilies 3-5
Garlic cloves 3
Petis (fermented shrimp paste) 2 tablespoons
Palm sugar, shaved 1 tablespoon
Sweet soy sauce 2 tablespoons
Water 200 ml
Salt to taste

Instructions:

  1. Prepare the Tofu: Heat oil in a pan and briefly fry the diced tofu until golden and slightly crispy. Set aside.

  2. Make the Sauce: In a mortar and pestle, combine the roasted peanuts, bird’s eye chilies, and garlic. Grind until you achieve a smooth paste.

  3. Combine Ingredients: Add the petis, salt, and shaved palm sugar to the ground mixture. Gently mix to combine.

  4. Add Soy Sauce: Stir in the sweet soy sauce and add water to reach your desired consistency. Mix well and taste for seasoning.

  5. Serve: Arrange the fried tofu on a serving plate, pour the sauce over, and garnish with bean sprouts, celery, sliced red chili, and fried shallots.

  6. Optional Accompaniments: Serve with lontong or as a tofu omelet (tahu telur) for an extra touch of flavor and texture.
