Chilean Alfajores Recipe

Alfajores are traditional Latin American treats, and the Chilean version is especially beloved for its delicate, melt-in-your-mouth texture and indulgent filling. These alfajores are made with a soft, crumbly dough and filled with creamy manjar (similar to dulce de leche). Perfect for tea time, gifting, or simply indulging, these cookies are sure to become a family favorite!

Ingredients

All-purpose flour, sifted 1 ½ cups
Egg yolks 5
Brandy or pisco (Chilean brandy) 1 tablespoon
Manjar (or dulce de leche) As needed for filling

Instructions

  1. Prepare the Dough
    Place the sifted flour into a large bowl. Add the egg yolks one at a time, mixing well after each addition. Slowly pour in the brandy or pisco, incorporating it into the mixture. Stir the ingredients together until they form a smooth, firm, and dry dough. If the dough is too dry, you may add small amounts of water to achieve the right consistency.

  2. Roll Out the Dough
    On a lightly floured surface, roll out the dough very thinly, aiming for a uniform thickness. Use a round cookie cutter (about 4-5 cm in diameter) to cut out circles of dough.

  3. Bake the Alfajores
    Place the dough circles onto a buttered or non-stick baking sheet, leaving a bit of space between them. Bake in a preheated oven at 400°F (200°C) for 8 to 10 minutes, or until the cookies are lightly golden. Be careful not to overbake as they should remain soft and tender.

  4. Assemble the Alfajores
    Once baked and cooled, take two cookies and generously spread manjar or dulce de leche on the flat side of one cookie. Sandwich it with another cookie, pressing gently to secure.

  5. Enjoy!
    Serve immediately, or store in an airtight container. These alfajores taste even better the next day as the cookies soften slightly, absorbing the flavor of the filling.
