Pesmol Bandeng Recipe

Ingredients

Medium-sized Bandeng Fish 1 whole
Shallots 15 pieces
Garlic 5 cloves
Red Chilies 10 pieces
Bird’s Eye Chilies 20 pieces
Ginger 5 cm
Turmeric 4 pieces
Candlenuts 3 pieces
Cooking Oil As needed for frying
Sugar To taste
Salt To taste
Flavoring Seasoning To taste

Instructions

  1. Cut the bandeng fish into five pieces, adjusting according to your preference.
  2. Rinse the fish thoroughly, then marinate with salt and the juice of one lime; let it sit for about 15 minutes. After marinating, fry the fish until golden.
  3. Prepare the spice paste by grinding the ginger, shallots, garlic, turmeric, red chilies, and some of the bird’s eye chilies (reserve some for later).
  4. In a skillet, heat oil and sauté the ground spice mixture along with the remaining bird’s eye chilies until fragrant and cooked through.
  5. Add the fried bandeng pieces to the skillet, mixing well with the spices.
  6. Season with sugar, salt, and flavoring seasoning according to your taste preferences.
  7. Taste and adjust seasoning as needed, and your delicious pesmol bandeng is ready to serve!
