Instructions
- Cut the bandeng fish into five pieces, adjusting according to your preference.
- Rinse the fish thoroughly, then marinate with salt and the juice of one lime; let it sit for about 15 minutes. After marinating, fry the fish until golden.
- Prepare the spice paste by grinding the ginger, shallots, garlic, turmeric, red chilies, and some of the bird’s eye chilies (reserve some for later).
- In a skillet, heat oil and sauté the ground spice mixture along with the remaining bird’s eye chilies until fragrant and cooked through.
