2 Potatoes, cut into chunks
1 tsp Garam masala
Handful of fresh coriander, finely chopped

Instructions

  1. Heat the Oil: In a pan, heat the vegetable oil over medium heat. Add the mustard seeds and curry leaves, allowing the seeds to splutter.

  2. Cook the Onions: Stir in the sliced onions and cook until they turn a light golden brown, creating a fragrant base for your dish.

  3. Prepare the Spices: In a pestle and mortar, combine the cumin and coriander seeds, pounding them into a fine powder. Add this spice mix, along with turmeric and finely chopped green chillies (and red chilli powder if using) to the pan with the onions. Sauté for about a minute until the spices release their aromatic fragrance.

  4. Add the Potatoes: Stir in the potato chunks and salt, cooking for about 5 minutes to coat the potatoes in the spice mixture.

  5. Steam the Potatoes: Reduce the heat and add a splash of water. Cover the pan with a lid, allowing the potatoes to steam for 15-20 minutes or until they are soft and tender.

  6. Finish the Dish: Remove the pan from heat, and stir in the garam masala and chopped fresh coriander for a burst of flavor.
