  1. Heat the Oil: Begin by heating the mustard oil in a karahi or a wok over medium heat. Once the oil is hot, add the mustard seeds. Wait for them to start sizzling, and then add the cumin seeds, cooking them until they become fragrant.

  2. Sauté Aromatics: Next, add the finely diced onion and chopped garlic to the pan. Sauté these ingredients until the onions are soft and lightly browned, which should take about 10 minutes.

  3. Create the Masala: Lower the heat, then incorporate the tomatoes, grated ginger, salt, turmeric, finely chopped green chilli, and dried fenugreek leaves. Continue to cook this mixture, allowing the onions and tomatoes to meld together into a thick, aromatic masala paste.

  4. Add Vegetables: Now, introduce the diced potato, bell pepper, mushrooms, carrot, and frozen peas into the pan. Stir everything together, ensuring the vegetables are well-coated with the flavorful sauce.

  5. Cook Through: Cover the pan with a lid and let the sabjee cook for about 10 to 20 minutes, stirring occasionally. This will allow the vegetables to soften and absorb the delightful spices.
