Instructions

To create the Paneer and Green Peas Paratha, follow these simple steps:

Step 1: Prepare the Dough

  1. In a mixing bowl, combine 1 cup of wheat flour, salt to taste, and a little oil. Mix well to ensure an even distribution.
  2. Gradually add lukewarm water, kneading the mixture until it forms a smooth, pliable dough. The dough should not be sticky; adjust the water and flour as needed.
  3. Once the dough is ready, cover it with a damp cloth or plastic wrap and let it rest for about 15-20 minutes.

Step 2: Prepare the Filling

  1. Heat a tablespoon of oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and allow them to sizzle for a few seconds.
  2. Add the chopped ginger and green chili to the pan, sautéing for a minute until fragrant.
  3. Incorporate the green peas paste into the pan and cook for about 3-4 minutes until the peas are partially cooked.
  4. Next, add the crumbled paneer, 2 teaspoons of red chili powder, 1 teaspoon of coriander powder, 1 teaspoon of amchur powder, and salt to taste. Stir well to combine all the ingredients and cook for an additional 2-3 minutes.
  5. Remove the filling mixture from heat and allow it to cool.

Step 3: Assemble the Parathas

  1. Once the dough has rested, divide it into small balls (about the size of a golf ball).
  2. Take one ball of dough and flatten it slightly. Dust it with some flour to prevent sticking.
  3. Roll it out into a small circle, about 4 inches in diameter.
  4. Place a generous tablespoon of the prepared paneer and peas filling in the center of the rolled-out dough.
  5. Carefully bring the edges of the dough together to enclose the filling, pinching it to seal completely. You should now have a filled ball of dough.
  6. Gently flatten the filled dough ball and dust it with a little more flour.
  7. Roll it out again, taking care not to press too hard to avoid breaking the seal.

Step 4: Cook the Parathas

  1. Preheat a tava (griddle) or non-stick pan over medium-high heat.
  2. Once hot, place the rolled paratha onto the tava. Cook for about 1-2 minutes until you see bubbles forming on the surface.
  3. Flip the paratha and apply a little ghee or oil on the cooked side. Cook for another minute or until golden brown spots appear.
  4. Flip again, applying ghee or oil to the other side, cooking for an additional minute. Both sides should be crispy and golden brown.
  5. Repeat the process for the remaining dough balls and filling.

Step 5: Serving Suggestions

Serve the Paneer and Green Peas Paratha hot, accompanied by coriander-mint chutney or tadka raita for a delightful evening snack or a hearty breakfast option. Enjoy the delightful blend of flavors and the warmth of this traditional dish with your loved ones.

Tips for Best Results

  • Make sure the filling is not too watery, as this can make the parathas difficult to roll out.
  • Experiment with additional spices or herbs to customize the filling to your taste.
  • For a twist, you can add finely chopped spinach or other vegetables to the filling mixture for added nutrition and flavor.

Indulge in the rich flavors of this Paneer and Green Peas Paratha and experience a taste of North India right in your kitchen!
