Ingredients:

Red chili (cabai merah besar) 1, diagonal slices

Galangal (laos/langkuas) 1 small piece
Tomato (tomat) 1, seeds removed and cut into quarters
Green onions (daun bawang) A few, chopped into long strips
Sweet soy sauce (kecap manis) To taste
Tamarind water (air asam jawa) A splash
Palm sugar (gula jawa) To taste
Salt (garam) To taste
Seasoning (penyedap) To taste
Black pepper (merica) To taste
Cooking oil (minyak goreng) For frying and sautéing

Instructions:

  1. Fry the Tempe:
    Heat oil in a pan and fry the tempe pieces until golden brown. Once crispy, remove from the pan and set aside.

  2. Sauté the Aromatics:
    In the same pan, sauté the garlic and shallots until fragrant.

  3. Add Flavorings:
    Next, add the bay leaves, galangal, and red chili slices. Stir for a few seconds until the aroma fills the air.

  7. Finish with Tamarind and Green Onion:
    Add a splash of tamarind water to balance the flavors. Stir again and then throw in the green onions. Cook briefly, just until the onions are slightly wilted.

  8. Serve:
