Instructions

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a baking sheet by greasing it with cooking oil spray, setting it aside for later use.

  2. Prepare the Mushrooms: Gently remove the stems from the mushrooms, keeping the caps and stems separately aside. Rinse and clean the mushroom caps under cold water, then pat them dry using a kitchen paper towel. Place the caps rounded side down on the greased baking sheet.

  3. Bake the Mushroom Caps: Place the baking sheet in the preheated oven and bake the mushroom caps for 12 to 14 minutes, until they are just tender and begin to release their moisture.

  4. Sauté the Filling: Finely chop the mushroom stems. In a skillet, heat 2 teaspoons of olive oil over medium-high heat. Once the oil is hot, add the chopped onions, garlic, and mushroom stems. Sauté the mixture until the onions are soft and translucent and the mushrooms have released their moisture, about 5 to 7 minutes.

  5. Add Spinach: Stir in the roughly chopped spinach leaves and white pepper powder. Continue to sauté the mixture until the spinach wilts and reduces in volume. Once done, turn off the heat and allow the mixture to cool for about 3 to 4 minutes.

  6. Make the Cheese Mixture: In a separate bowl, combine the mascarpone cheese, Britannia cream cheese, mozzarella cheese, parsley, basil, black pepper, and salt. Whisk the ingredients together by hand until you achieve a smooth and creamy consistency.

  7. Combine the Mixtures: Gently fold in the sautéed vegetable mixture into the cheese mixture, ensuring everything is well incorporated.

  8. Prepare the Parmesan Topping: In another small bowl, mix the grated Parmesan cheese with garlic powder, setting it aside for later use.

  9. Stuff the Mushrooms: Once the baked mushroom caps have cooled slightly, use a paper towel to remove any excess moisture from both the inside and outside of the caps; they should be completely dry. Generously fill each mushroom cap with the cheese and vegetable mixture, ensuring that they are heaped on top.

  10. Top and Bake Again: Sprinkle the Parmesan garlic mixture over the stuffed mushrooms. Arrange the stuffed mushrooms back onto the greased baking sheet and return them to the oven. Bake for an additional 8 to 10 minutes, or until the tops become golden brown and bubbly.

  11. Cool and Serve: Remove the stuffed mushrooms from the oven and allow them to cool slightly. Serve your Four Cheese and Spinach Stuffed Mushrooms warm, either on their own or alongside other delightful appetizers such as Baked Potato Thyme Rolls or Whole Wheat Bread with Oatmeal and Flaxseeds for a complete experience during tea time.

Enjoy!

These Four Cheese and Spinach Stuffed Mushrooms are not only a delicious appetizer but also a wonderful addition to any meal, celebrating the rich flavors of cheese and fresh vegetables. Whether you’re hosting a party or enjoying a quiet evening at home, these stuffed mushrooms are sure to satisfy and impress. Happy cooking!
