Ayam, Eggs & Tempeh in Pecel Broth

Ingredients

Eggs (hard-boiled) 3 eggs
Medium-sized tempeh, diced and fried 1 block
Chicken pieces 4 pieces
Whole bird’s eye chilies 10 chilies
Lemongrass, white part only, bruised 2 stalks
Kaffir lime leaves 3 leaves
Cabbage, thinly sliced 2 leaves
Water 750 ml
Thick instant coconut milk 100 ml
Palm sugar As needed
Salt As needed
Seasoning As needed

For the Spice Paste

Ingredient Quantity
Red curly chilies 15 chilies
Shallots 8 cloves
Garlic cloves 5 cloves
Roasted candlenuts 3 nuts
Fresh ginger (approx. 2 cm) 2 cm piece
Fresh kencur (aromatic ginger, approx. 2 cm) 2 cm piece
Small roasted shrimp paste (ABC brand) 1 small packet (grilled)

Instructions

  1. Sauté the spice paste: Start by blending the red curly chilies, shallots, garlic, roasted candlenuts, ginger, kencur, and roasted shrimp paste into a smooth paste. Heat oil in a pan and sauté the spice paste over medium heat until fragrant. Add the kaffir lime leaves and bruised lemongrass stalks. Continue stirring until the leaves soften and release their aroma.

  2. Cook the chicken: Add the chicken pieces to the pan with the spice mixture and cook until the chicken firms up and is almost fully cooked.

  3. Add liquid: Pour in the water and the thick coconut milk. Stir until well combined, and then add the diced fried tempeh and the boiled eggs.

  4. Seasoning: Add palm sugar, salt, and seasoning to taste. Stir everything together and bring the mixture to a boil. Taste and adjust the seasoning as needed.

  5. Simmer: Continue cooking until the chicken becomes tender, and the broth is flavorful and well absorbed by the tempeh.

  6. Add final touches: Throw in the whole bird’s eye chilies and the thinly sliced cabbage leaves. Let everything simmer for a few more minutes until the cabbage softens slightly.

  7. Serve: Remove from heat and serve this comforting dish of Ayam, Eggs, and Tempeh in a spicy pecel-inspired broth.
