Instructions

  1. Prepare the Thandai Masala:
Begin by making a fragrant paste for the thandai masala. In a mixer grinder, blend together the blanched almonds, cashew nuts, pistachios, poppy seeds, cardamom powder, fennel seeds, cinnamon powder, and whole black peppercorns until you achieve a smooth consistency. Once blended, set this thandai masala aside.

  2. Condense the Milk:
In a heavy-bottomed saucepan, pour in the 3 liters of milk and bring it to a gentle boil over medium heat. As soon as the milk reaches a boil, reduce the heat to low and let it simmer. Stir the milk almost continuously at this stage to prevent it from scorching.

  3. Simmer Until Reduced:
Continue to simmer the milk, stirring frequently until it reduces to less than half of its original volume. This step is crucial; while stirring is important at the beginning, it becomes essential to stir continuously as the milk thickens to avoid burning, which can create an unpleasant taste.

  4. Add Sugar and Thandai Masala:
Once the milk has reduced significantly, stir in the sugar, allowing it to dissolve completely. Then, fold in the prepared thandai masala, mixing thoroughly. For an extra smooth texture, you can use a hand blender to whisk the mixture well.

  5. Cool and Freeze:
After combining the ingredients, turn off the heat and allow the kulfi mixture to cool completely at room temperature. Once cooled, pour the thandai kulfi milk into your desired molds, filling them about three-quarters full. Seal each mold tightly and place them in the freezer.

  6. Freezing Time:
Let the kulfi freeze for at least 15 hours or until completely solid. Patience is key here, as the longer it sets, the creamier the texture will be.

  7. Serving the Kulfi:
When ready to serve, gently run the kulfi molds under warm water for a few seconds to help release the kulfi easily. Slide the frozen dessert onto serving plates and garnish with extra chopped nuts if desired.

  8. Enjoy!
Serve your delightful Thandai Kulfi as a special dessert during Holi festivities, or enjoy it on any hot summer day as a refreshing treat. The rich flavors and creamy texture will surely be a crowd-pleaser!

Tip: For an extra twist, you can experiment by adding a splash of rose water or saffron to the kulfi mixture before freezing for enhanced flavor and color.

Indulge in this sweet symphony of flavors with your friends and family, celebrating not only the festival of colors but also the richness of Indian culinary heritage with this delectable Thandai Kulfi!
