Instructions

  1. Prepare the Tofu: Cut the yellow tofu into triangular shapes, then fry them in hot oil until golden brown. Once cooked, remove them from the oil and drain on paper towels to absorb excess oil.

  2. Prepare the Tempeh and Eggs: Slice the tempeh according to your preference (no need to fry it). Boil the eggs until hard-boiled, peel them, and then fry them in oil until they turn golden brown. Set aside to drain on paper towels.

  3. Make the Spice Paste: Grind all the ground spices (bird’s eye chilies, red chilies, shallots, garlic, turmeric, ginger, and candlenut) into a fine paste.

  4. Sauté the Spices: In a large pot, heat some oil over medium heat and sauté the ground spice paste until fragrant. Add the coarse spices (galangal, kaffir lime leaves, lemongrass) and continue to sauté for a few more minutes.

  5. Combine the Ingredients: Pour in the sweet soy sauce and the seasoning powder, then add the water. Stir well to combine. Introduce the tempeh and fried tofu to the pot, mixing gently until they are coated with the sauce. Allow it to simmer for about 3 minutes, stirring occasionally.

  6. Add the Eggs: Gently add the fried eggs to the stew and stir until they are evenly distributed. Taste the sauce and adjust the seasoning if necessary. Allow it to simmer until the flavors meld together, and the stew thickens slightly.

  7. Serve: Once done, remove from heat and let it sit for a moment. Serve the Semur T3 hot over steamed rice, garnished with fresh herbs if desired.
