Tempe Mendoan Recipe

Ingredients

All-purpose flour 3 tablespoons
Rice flour 1 tablespoon
Large garlic clove (or 2 small) 1 clove
Fresh turmeric (or turmeric powder) 0.5 cm or to taste
Ground coriander 1 teaspoon
Salt To taste
Flavoring (optional) To taste
Water As needed
Green onions, thinly sliced To taste
Lime leaves, thinly sliced To taste
Basil leaves, thinly sliced To taste
Cooking oil For frying

Instructions

  1. Prepare the Spice Mix: Start by finely grinding the garlic, turmeric, and ground coriander in a mortar and pestle or food processor until smooth.

  2. Make the Batter: In a mixing bowl, combine the all-purpose flour, rice flour, salt, and any flavoring you wish to add. Stir in the ground spice mixture along with the finely sliced green onions, lime leaves, and basil leaves. Gradually add water until you achieve a batter that is not too runny.

  3. Coat the Tempe: Dip the sliced tempe into the prepared batter, ensuring each piece is well coated.

  4. Fry the Tempe: Heat oil in a frying pan over medium heat. Once hot, carefully place the battered tempe into the oil. Fry until golden brown, ensuring not to overcook.

  5. Serve: Remove the tempe from the oil and drain on paper towels. Serve warm as a delightful snack or side dish.

Note: For added flavor, consider mixing in chopped chives and celery into the batter. Enjoy your Tempe Mendoan!
