Tempe Manis Laos (Tempeh with Galangal)

Ingredients

Ingredient Quantity
Tempeh 1 block
Shallots 5 cloves
Garlic 3 cloves
Galangal 1 large piece
Granulated Sugar 1 tablespoon
Salt To taste
Tamarind Water 3 tablespoons

Instructions

  1. Prepare the Tempeh: Cut the tempeh into matchstick shapes, ensuring they are slightly thick for a hearty texture. Fry the pieces in oil until they are half-cooked, then set them aside on a paper towel to drain excess oil.

  2. Make the Spice Paste: In a blender or mortar, grind the shallots, garlic, and galangal until you achieve a smooth paste.

  3. Sauté the Paste: In a pan, heat some oil and sauté the spice paste until it becomes fragrant. Add the salt, sugar, and tamarind water, stirring well. Continue cooking until the mixture thickens slightly.

  4. Combine with Tempeh: Gently add the fried tempeh into the pan, stirring carefully to coat the tempeh with the rich, aromatic sauce. Allow it to simmer for a few minutes, letting the flavors meld and the tempeh absorb the sauce.

  5. Serve: Once everything is well-combined and heated through, remove from heat and serve warm. Enjoy this delightful dish that beautifully balances sweet, savory, and aromatic flavors! 😍
