Pepes Tempe Recipe

Ingredients:

Green chili (sliced) 10 pieces, diagonally sliced
Tempe (sliced and mashed) 250 grams
Basil leaves To taste
Red tomato (chopped) 1 piece
Salt To taste
Banana leaves For wrapping

Spice Mixture:

Kencur (fresh galangal) 5 cm
Garlic 1.5 cloves
Shallots 5 pieces
Red curly chili 3 pieces
Ground coriander 1/4 teaspoon

Instructions:

  1. Prepare the Spice Mixture: In a mortar and pestle, combine the kencur, garlic, shallots, red curly chili, and ground coriander. Grind until a smooth paste forms.

  2. Mix Ingredients: In a mixing bowl, combine the ground spice mixture with the mashed tempe and salt. Add the sliced green chili, chopped tomato, and basil leaves, stirring until everything is evenly mixed.

  3. Wrap: Lay out the banana leaves and place a portion of the tempe mixture in the center. Fold the leaves over to create a secure package, and use toothpicks or skewers to hold the ends closed. This recipe yields about three packets of Pepes Tempe.

  4. Steam: Place the wrapped Pepes Tempe in a steamer and cook for approximately 30 minutes, or until thoroughly cooked.
