Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender or food processor, combine 1 cup of cottage cheese, 1 ½ tbsp of lemon juice, and 2 tbsp of milk, processing for 10-15 seconds until the mixture is smooth and well combined.
  3. In an ungreased 9×13-inch glass baking dish, spread the thawed hash brown potatoes into an even layer.
