Sweet and Spicy Tempeh Crisps (Kering Tempe Pedas Manis)

Ingredients:

Ingredients Quantity
Tempeh 1 block
Shallots 6 cloves
Garlic 3 cloves
Kaffir lime leaves 3 leaves
Bird’s eye chilies (adjust to taste) 15
Galangal (optional) A small piece
Ginger (optional) A small piece
Salt To taste
Soy sauce To taste
Sugar To taste
Cooking oil As needed for frying

Instructions:

Steps Description
1. Slice the tempeh Cut the tempeh into small, thin pieces. Be careful not to slice them too thin.
2. Fry the tempeh Heat the cooking oil in a pan and fry the tempeh until golden brown and crispy. Make sure not to overcook. Once done, remove and drain excess oil.
3. Prepare the spice paste Grind the shallots, garlic, and a pinch of salt until smooth.
4. Stir-fry the spices Heat a little oil in the pan. Sauté the spice paste until fragrant. Add chopped bird’s eye chilies, torn kaffir lime leaves (remove the stems), galangal, and ginger. Stir-fry until the spices are aromatic.
5. Combine with tempeh Add the fried tempeh to the pan and stir well. Add soy sauce, salt, and sugar to taste. Stir until the seasonings coat the tempeh evenly.
6. Final touch Taste and adjust seasoning if necessary. Stir until the spices are well absorbed, then turn off the heat.
