Instructions

  1. Begin by boiling the potatoes in a pressure cooker with water and a pinch of salt until three whistles indicate they are cooked. Once done, peel the potatoes and mash them in a bowl.

  2. To the mashed potatoes, add cumin powder, red chili powder, garam masala, black pepper, and black salt, mixing well until combined.

  3. Next, prepare the tomatoes by slicing the tops and scooping out the pulp using a spoon, leaving a hollow shell for the stuffing.

  4. Fill each tomato shell with the seasoned potato mixture.

  5. Heat a tava (griddle) and add 2 to 3 tablespoons of oil. Once hot, place the stuffed tomatoes, ensuring the filled side faces down so the top cooks nicely.

  6. Cover the tava and let the tomatoes cook for about 10 to 15 minutes, allowing them to soften and absorb the flavors.

  7. Once cooked, transfer the tomatoes to a mixer grinder and blend to a smooth paste.

  8. In a separate pan, heat a little more oil, then add the tomato paste along with salt, sugar, and tomato ketchup. Cook for 10 to 12 minutes until it thickens slightly.

  9. After cooking, pour the mixture into a bowl and garnish with chopped onion, green chilies, coriander, and puffed rice or salted snacks for added crunch.
