Instructions

  1. Prepare the Batter:
    Begin by washing and soaking the green moong dal and broken raw rice separately in ample water for about 6-7 hours or overnight, ensuring the fenugreek seeds are soaked along with the raw rice.

  2. Grind Ingredients:
    In a mixer grinder, dry grind the instant oats to a fine powder and set aside. Next, grind the soaked moong dal, green chillies, and ginger together with sufficient water until you achieve a smooth paste. Follow this by grinding the soaked rice and fenugreek seeds in the same manner.

  3. Combine Batters:
    In a large mixing bowl, combine the moong dal mixture, rice mixture, and oats powder. Season with salt to taste and adjust the consistency to resemble that of dosa batter. Gently fold in the chopped coriander leaves.

  4. Prepare the Topping:
    Finely chop the yellow, red, and green bell peppers, and slice the onion. Coarsely crumble the paneer with your fingers and grate the cheese. In a bowl, mix together the chopped vegetables, paneer, coriander leaves, salt, and dried mixed herbs.

  5. Sauce Mixture:
    In another bowl, combine the tomato ketchup and red chilli sauce. Adjust the spiciness according to your preference.

  6. Cook the Pesarattu:
    Heat a pancake pan or a non-stick griddle and grease it lightly with ghee. Pour a ladleful of batter onto the hot pan and spread it into a round shape, ensuring it is not too thick. Smear a little ghee on top, cover, and cook until the edges start to lift and turn golden brown.

  7. Flip and Fill:
    Once one side is cooked, flip it over and allow the other side to crisp up. Transfer the pancake onto a plate, keeping the first cooked side facing down. Spread about 1 tablespoon of sauce on top and add around 2 heaped teaspoons of the mixed vegetable filling. Grate cheese generously over the filling, then return the pesarattu to the pan to melt the cheese over low heat.

  8. Prepare Cheese Vegetables Pesarattu Wraps:
    For a delightful twist, spread the batter to form a dosa on a hot greased griddle. When cooked on one side, flip and cook until done.
