Ingredients

1 Sweet Potato, peeled and diced
1 Brinjal (Baingan/Eggplant), diced
1 Green zucchini, diced
1 Bell Pepper (Red, Yellow, or Green), chopped
1 Onion, chopped
1 cup Spinach, chopped
3 cloves Garlic
2 inches Cinnamon stick (Dalchini)
1 teaspoon Curry powder
½ teaspoon Turmeric powder (Haldi)
1 cup Fresh orange juice
A few Almonds (Badam)
A few Raisins
1 teaspoon Black pepper powder
2 tablespoons Sunflower oil

Instructions

  1. Preparation: Begin by preparing all the ingredients. Chop the vegetables—green beans, carrot, sweet potato, eggplant, zucchini, bell pepper, and onion—and set them aside.

  2. Sauté Vegetables: In a large saucepan, heat 2 tablespoons of sunflower oil over medium heat. Add the chopped vegetables and sauté for about 3-5 minutes until they are tender yet crisp.

  3. Prepare Spice Mix: In a separate medium pan, heat 1 tablespoon of olive oil. Add minced garlic, turmeric, curry powder, and the cinnamon stick, along with salt and black pepper. Sauté for approximately 3 minutes to allow the flavors to meld.

  4. Combine Ingredients: Transfer the sautéed spice mixture into the pan with the vegetables. Add the fresh orange juice, almonds, raisins, and a pinch of salt. Stir well to combine all ingredients.

  5. Simmer: Lower the heat and let the mixture simmer for 15-20 minutes, allowing the flavors to infuse.

  6. Add Spinach: Finally, stir in the chopped spinach and let the curry boil for an additional 5 minutes until everything is well combined and the spinach is wilted.
