Let’s embark on this journey of flavors, where fresh salmon takes center stage, surrounded by a medley of spices and vegetables that make each bite memorable.

Ingredients

Ingredient Quantity
Fresh salmon fillet 1 kg
Lime juice 1 fruit (jeruk nipis)
Salt To taste (secukupnya)
Ground black pepper ½ teaspoon
Red shallots, thinly sliced 6 cloves
Garlic, crushed 4 cloves
Lemongrass, crushed and tied 2 stalks
Dried shrimp 4 pieces (soaked and toasted)
Tomatoes (red/green) 4 pieces (quartered)
Bird’s eye chilies 40 pieces
Ginger, crushed 2 pieces
Onion, sliced 1 piece
Spring onions, diagonally sliced 2 stalks
Basil leaves To taste (sesuai selera)
Water As needed (to cook)

Instructions

  1. Preparation of Salmon: Start by cutting the salmon into desired portions. Gently marinate the pieces with lime juice and salt, allowing them to sit for about 15 minutes to absorb the flavors. After marinating, rinse the salmon thoroughly under running water to remove excess salt and lime juice.

  2. Steaming the Salmon: Prepare your steamer and place the marinated salmon inside. Steam the fish for approximately 10 minutes, or until it is cooked through and tender. Once done, carefully remove the salmon and set it aside.

  3. Sautéing Aromatics: In a large pot, heat a little oil over medium heat. Add the sliced red shallots and crushed lemongrass to the pot, sautéing them until they become fragrant and golden brown. This step will create a flavorful base for the soup.

  4. Building the Broth: Pour enough water into the pot to create a soup base and bring it to a boil. Once boiling, add the crushed garlic, dried shrimp, crushed ginger, ground black pepper, and salt. Allow the mixture to simmer, letting the flavors meld together beautifully.

  5. Incorporating the Salmon and Vegetables: After the broth reaches a rolling boil, gently add the steamed salmon and the bird’s eye chilies. Cook for a few minutes, allowing the fish to reheat while infusing the soup with its rich flavors. Next, introduce the sliced onion, quartered tomatoes, basil leaves, and spring onions to the pot. Stir everything together gently, ensuring the ingredients are well distributed throughout the broth.

  6. Final Touches: Once all the ingredients are in, give the soup a final stir. Taste and adjust the seasoning, adding more salt or pepper if necessary. When satisfied with the flavor, turn off the heat.

  7. Serving: Your delicious salmon soup is now ready to be served! Ladle the hot soup into bowls, garnishing with additional fresh basil or spring onions if desired. For an added kick, you may choose to serve some crushed bird’s eye chilies on the side, allowing guests to customize the heat level to their liking.
