Ingredients

Pindang tongkol fish (cut into small pieces) 12 small pieces
Banana leaves (for wrapping) Several leaves

Granulated sugar To taste
Seasoning (optional) To taste

Salam leaves (torn) Several leaves
Lemongrass (crushed, cut into 3 cm pieces) 2 stalks
Toothpicks (for securing the wraps) As needed
Green tomatoes (cut into wedges) 5 pieces

For the Spice Paste:

Ingredient Quantity
Shallots 12 pieces
Garlic 6 cloves
Candlenuts (kemiri) 6 pieces
Turmeric 2 pieces
Red bird’s eye chilies 20 pieces
Red chilies 10 pieces
Coriander 1/2 teaspoon
Ginger 1 piece (about 1-inch)
Galangal 1 piece (about 1-inch)

Instructions

  1. Prepare the Fish:
    Rinse the pindang tongkol fish in hot water to eliminate any fishy smell, then rinse under running water. Lightly fry the fish until just cooked; this helps prevent it from breaking apart when mixed with the spices.

  2. Prepare the Wrapping:
    Cut banana leaves into appropriate sizes for wrapping the fish.

  3. Mix Ingredients:
    In a bowl, combine the fried fish with the ground spice paste and add the green tomatoes, salam leaves, basil, and lemongrass. Season with salt, sugar, and optional seasoning. Mix well, tasting to adjust the flavors.

  4. Wrap the Fish:
    Take a piece of banana leaf, place a portion of the fish mixture on it, and wrap it securely, resembling a lontong or rice parcel. Use toothpicks to secure the wraps.

  5. Steam the Pepes:
    Steam the wrapped fish packets for about 45-60 minutes, or until the spices are aromatic and cooked through. This step allows the flavors to meld beautifully.

  6. Serving:
    Serve immediately, or for an extra flavor boost, grill the packets briefly before serving. Enjoy your Pepes Pindang Tongkol!
