Indulge in the comforting flavors of this Creamy Tuna Corn Soup, a delightful blend of fresh ingredients that come together in a warm, satisfying dish. Perfect for cozy evenings or when you need a quick, nutritious meal, this recipe is easy to follow and allows for personal touches.

Ingredients

Ingredient Quantity
Corn 1 ear, kernels removed
Tuna 50g, diced fresh
Sweet Potato 1, diced
Onion 1, finely sliced
Green Onion 1 stalk, sliced
Celery 1 stalk, sliced
Milk 100ml
Cheddar Cheese 30g, grated
Salt 1 tsp
Fish Sauce ½ tsp
Pepper ½ tsp
Beef Broth 2 tbsp (or chicken broth, or omit)
Olive Oil 1 tsp (for sautéing)
Water 100-200ml

Instructions

  1. Sauté Aromatics: In a pot, heat the olive oil over medium heat. Add the sliced onion and sauté until fragrant and translucent.

  2. Cook Tuna: Add the diced tuna to the pot and stir until it changes color, indicating it’s cooked through.

  3. Add Vegetables: Incorporate the diced sweet potato, blended corn (half of it), and the remaining whole corn kernels. Pour in the water and bring to a simmer.

  4. Simmer Until Soft: Reduce heat to low and let it simmer until the sweet potato is tender.

  5. Creamy Finish: Stir in the milk and cook until the soup thickens slightly. Add the grated cheese, green onion, celery, fish sauce, and pepper, stirring well.

  6. Final Cook: Cover the pot and cook until the soup has thickened to your liking. Remove from heat and serve hot.

Notes

  • For a chicken variation, replace tuna with diced boneless chicken and increase fish sauce to 1 tsp.
  • Feel free to add extra vegetables like carrots, broccoli, or peas for more nutrition.
  • For a spicier kick, consider adding chili powder or hot sauce.
  • To enhance the creaminess, add more cheese or substitute some milk with heavy cream.

Enjoy this comforting bowl of Creamy Tuna Corn Soup that warms the heart and satisfies the palate!
