Tamarind (इमली) A small piece
Salt (नमक) To taste
Oil (तेल) 1 teaspoon (for cooking)
Mustard seeds (राइ) ½ teaspoon

Instructions

  1. Soak Tamarind: Begin by soaking the tamarind in a small amount of water to soften it.

  2. Roast Sesame Seeds: In a pan, heat on medium flame and add the black sesame seeds. Roast them until they become fragrant. Once done, set them aside.

  3. Cook Urad Dal: In the same pan, add 1 teaspoon of oil. When heated, add urad dal, dry red chillies, and curry leaves. Cook this mixture until the dal turns golden brown. Turn off the heat once done.

  4. Blend Ingredients: In a mixer grinder, combine the roasted black sesame seeds, soaked tamarind (with its water), the cooked dal mixture, and salt. Blend until you achieve a thick paste.

  5. Prepare Tempering: In a small tempering pan, heat some oil. Add mustard seeds and allow them to crackle for about 10 seconds. Then, add the curry leaves and let them cook for an additional 5 seconds.

  6. Combine: Pour this tempering over the chutney mixture and stir well to combine all the flavors.

  7. Serve: Serve the sesame seeds chutney alongside mixed vegetable sambar, rice, and chow chow thoran for a delightful meal.
