Kaffir lime leaves 2 leaves
Bay leaves 2 leaves
Galangal (lengkuas) 1 slice

Instructions:

Steps Description
1. Prepare the Tuna Clean the tuna and cut it into 5 pieces. Rub the pieces with lime juice and a pinch of salt, then set aside to marinate while preparing the sauce.
2. Fry the Shallots and Chilies Heat some cooking oil in a pan over medium heat. SautĆ© the sliced shallots and whole birdā€™s eye chilies until fragrant and slightly softened.
3. Add the Tomatoes and Spice Paste Add the chopped tomatoes and the ground spice paste (garlic, turmeric, and chili powder). Stir fry for a few minutes until the spices are well combined and aromatic.
4. Pour in Water and Aromatics Add a little water to the pan to create a sauce, then stir in the bilimbi, lemongrass, kaffir lime leaves, bay leaves, and galangal. Bring the mixture to a boil.
