Instructions

  1. Prepare the Milagai Podi: In a pan, combine the white urad dal and chana dal. Sauté over medium heat until the dals turn a beautiful golden brown.
  2. Add Flavor: Once the dals are toasted, introduce the sesame seeds, dry red chillies, curry leaves, and garlic into the pan. Sauté until the garlic becomes light brown and the curry leaves are crisp.
  3. Finish the Mixture: Add asafoetida and sauté for a few more seconds before turning off the heat. Allow this mixture to cool completely.
  4. Grind to Powder: Once cooled, transfer the mixture to a mixer grinder and blend until you achieve a fine powder. This is your spicy milagai podi.
  5. Make the Uthappam: Heat a dosa tawa (griddle) on medium heat and lightly grease it with sesame oil. Pour a small ladle of the idli/dosa batter in the center of the tawa, sprinkle a generous amount of milagai podi on top, and drizzle with sesame oil.
  6. Cook: Allow the uthappam to cook for about 2 minutes or until the base turns golden brown. Carefully flip it over and cook the other side for another 2 minutes until fully cooked.
  7. Serve: Transfer the uthappam to a serving plate. Repeat the process for the remaining batter. Serve hot alongside kadale chutney, tomato onion chutney, or any chutney of your choice for a delightful and comforting meal.
