Instructions

1. Prepare the Filling:
Begin the delightful process of creating Besan Methi Paratha by first preparing the filling. In a medium-sized pan, heat 2 tablespoons of sunflower oil over medium heat. Once the oil is warm, add 1 teaspoon of cumin seeds, 1/2 teaspoon of ajwain, and 1/4 teaspoon of asafoetida. Allow these spices to sizzle and release their fragrant aroma.

Next, gently stir in 1/2 cup of gram flour (besan) and roast it on medium-high heat. Continuously stir the mixture to ensure even cooking. The besan will gradually change color and develop a light brown hue—this is your cue that it’s ready.

2. Add the Spices:
Once the besan is lightly roasted, incorporate the dry spices: 1 teaspoon of red chilli powder, 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, 1 teaspoon of amchur powder, and 1 teaspoon of garam masala. Season the mixture with salt to taste. Mix thoroughly, allowing the spices to meld together beautifully.

3. Incorporate Methi Leaves:
Gently fold in the finely chopped methi leaves (1-1/2 cups) into the besan mixture. Stir well and let the methi leaves wilt, allowing their flavors to integrate into the besan filling. Once combined, turn off the heat and transfer the mixture to a bowl, allowing it to cool to room temperature.

4. Make the Dough:
In a separate mixing bowl, combine 2 cups of whole wheat flour with salt to taste. Gradually add water, little by little, kneading to form a soft and smooth dough. Once the flour is well incorporated, drizzle about 1 teaspoon of oil over the dough and knead for another couple of minutes. Cover the dough with a damp cloth and let it rest for a while.

5. Shape the Parathas:
Preheat a roti tawa (griddle) over medium heat. To shape your parathas, divide the rested dough into 6-8 equal portions and roll them into smooth balls. Take one ball and roll it out into a disc approximately 2 inches in diameter.

Place a spoonful of the Besan Methi filling in the center of the disc. Gently bring the edges of the dough towards the center, pinching and sealing them together to encase the filling. Lightly flatten the filled dough ball with your palm, dusting it with a little flour if necessary to prevent sticking.

6. Cook the Parathas:
Roll the stuffed dough into a circle, being careful to maintain the seal on the filling. Place the rolled Besan Methi Paratha onto the preheated tawa. Cook it on both sides until you see brown spots and the paratha is fully cooked through.

Smear a teaspoon of ghee or oil over each side of the paratha and continue cooking until it turns golden brown and crisp. Once cooked, transfer the paratha to a platter and repeat the process for the remaining dough balls.

7. Serve:
For an exquisite meal, serve your freshly made Besan Methi Paratha alongside refreshing Boondi Raita and tangy Aam Chunda Pickle. For a complete breakfast experience, accompany it with a steaming cup of Adrak Chai (Indian-style ginger tea).
