Ingredients

Ground coriander 1-2 teaspoons

For Basting Sauce

Shallots 4 cloves
Garlic cloves 3
Candlenuts (Kemiri) 3-4 nuts
Salt 1 teaspoon
Sweet soy sauce (Kecap Manis) 4-5 tablespoons (adjust to taste)

Instructions

Step 1: Prepare the Catfish

  1. Clean each catfish thoroughly, removing the gills and any internal organs.
  2. Rinse the fish well under cold water to remove any remaining impurities. Set aside.

Step 2: Prepare the Marinating Seasoning (Ungkep)

  1. Using a mortar and pestle or a blender, grind together the garlic, ginger, and ground coriander to a smooth paste.
  2. In a large pan, heat a small amount of oil over medium heat, then add the marinating seasoning paste.
  3. Sauté the paste until it becomes fragrant, then add enough water to cover the catfish.
  4. Add salt and bring the mixture to a gentle boil.
  5. Place the catfish in the boiling seasoning and cook for about 5 minutes to lightly marinate. Avoid overcooking, as the fish will be grilled in the next step.
  6. Remove the fish from the pan and set aside to cool slightly.

Step 3: Prepare the Basting Sauce

  1. Blend together the shallots, garlic, and candlenuts until you have a smooth paste.
  2. Add salt to the paste, then stir in the sweet soy sauce until well combined.

Step 4: Grill the Catfish

  1. Preheat a Happycall pan or a stovetop grill to medium-high heat.
  2. Brush the basting sauce generously onto each side of the marinated catfish, coating them thoroughly.
  3. Place the catfish on the preheated grill or pan and cook for about 5-7 minutes on each side, or until the skin is crispy and the fish is cooked through. Turn the fish carefully to avoid breaking it, ensuring both sides are nicely grilled.

Step 5: Serve

  • Serve the grilled catfish hot, alongside steamed rice or fresh vegetables.
