Instructions

To prepare Mooli Ki Sabzi, start by heating 1 tablespoon of oil in a kadai (wok) over medium heat. Once the oil is hot, add 1 teaspoon of mustard seeds and allow them to splutter for about 10 seconds. Following this, introduce 6 curry leaves and 2 dry red chillies, letting them sizzle for another 30 seconds to infuse the oil with their flavors.

Next, carefully add the chopped radish leaves to the kadai, stirring them gently to combine with the aromatic base. Allow this mixture to cook for 1 minute, ensuring that the leaves wilt and soften.

After the leaves have cooked down, it’s time to add the chopped radishes. Increase the heat to high and cook the radishes for approximately 2 minutes, stirring occasionally. This high heat will help retain some of the crunch while enhancing the overall flavor.

Once the radishes have cooked slightly, season the mixture with salt, 2 teaspoons of red chili powder, and 1 tablespoon of tamarind paste. Stir everything together until well incorporated, and then reduce the heat to medium-low. Allow the sabzi to simmer until the radishes are tender but still firm, approximately 5-7 minutes.

After the radishes are cooked to your liking, remove the kadai from the heat. To finish, garnish the sabzi with 2 tablespoons of grated coconut, which adds a delightful sweetness and texture contrast to the dish.
