Instructions

  2. Using a knife, make small cross-shaped slits (X) on the base of each tomato to aid in peeling later.

Step 2: Blanch the Tomatoes

  1. Boil water in a large saucepan over medium heat.
  2. Once boiling, gently add the tomatoes and blanch for 5–10 minutes. This process helps to soften the skin for easy peeling.
  3. Turn off the heat and carefully remove the tomatoes from the water. Allow them to cool slightly.

Step 3: Peel and Deseed

  1. Once cooled, peel off the tomato skins by hand.
  2. Halve the tomatoes and gently squeeze out the seeds and any excess liquid, leaving you with a firm pulp.
  3. Chop the peeled and deseeded tomatoes finely, or pulse them briefly in a food processor for a smoother texture.

Step 4: Cook the Tomato Mixture

  1. Transfer the chopped tomatoes to a large, heavy-bottomed pan or wok. Set the heat to medium-high and cook for about 15 minutes, stirring occasionally to prevent sticking.
  2. Add the sugar, ground cinnamon, and clove powder. Stir well to combine.
  3. Bring the mixture to a boil, then reduce to a simmer, stirring occasionally to avoid burning. Continue to cook until the mixture thickens to a jam-like consistency (about 30 minutes).

Step 5: Add Lemon Juice

  1. Once the jam reaches a thick and spreadable consistency, add the lemon juice.
  2. Stir well and cook for an additional 1–2 minutes, then turn off the heat.
