Instructions
Step 1: Prepare the Tomatoes
- Begin by washing the tomatoes thoroughly under running water.
- Using a knife, make small cross-shaped slits (X) on the base of each tomato to aid in peeling later.
Step 2: Blanch the Tomatoes
- Boil water in a large saucepan over medium heat.
- Once boiling, gently add the tomatoes and blanch for 5–10 minutes. This process helps to soften the skin for easy peeling.
- Turn off the heat and carefully remove the tomatoes from the water. Allow them to cool slightly.
Step 3: Peel and Deseed
- Once cooled, peel off the tomato skins by hand.
- Halve the tomatoes and gently squeeze out the seeds and any excess liquid, leaving you with a firm pulp.
- Chop the peeled and deseeded tomatoes finely, or pulse them briefly in a food processor for a smoother texture.
Step 4: Cook the Tomato Mixture
- Transfer the chopped tomatoes to a large, heavy-bottomed pan or wok. Set the heat to medium-high and cook for about 15 minutes, stirring occasionally to prevent sticking.
- Add the sugar, ground cinnamon, and clove powder. Stir well to combine.
- Bring the mixture to a boil, then reduce to a simmer, stirring occasionally to avoid burning. Continue to cook until the mixture thickens to a jam-like consistency (about 30 minutes).
Step 5: Add Lemon Juice
- Once the jam reaches a thick and spreadable consistency, add the lemon juice.
- Stir well and cook for an additional 1–2 minutes, then turn off the heat.
Step 6: Cool and Store
- Allow the jam to cool for about 10 minutes.
- Transfer the cooled jam into sterilized glass jars, leaving a small gap at the top. Seal tightly and store in a cool, dry place.
Serving Suggestions
