Instructions

  1. Heat the Oil: Start by heating the oil in a deep frying pan or kadhai over medium heat.

  2. Add Spices: Once the oil is hot, add the mustard seeds and sesame seeds. Let them sizzle for about 10 seconds until they begin to pop.

  3. Incorporate Aromatics: Next, add the finely chopped green chillies, asafoetida, goda masala, and turmeric powder to the pan. Stir the mixture and allow it to cook for about 1 minute, letting the spices release their fragrant aroma.

  4. Add Vegetables: Now, add the chopped potatoes, green gram, and avarakalu to the pan. Mix everything thoroughly to ensure that the vegetables are well-coated with the spices.

  5. Season: Add salt to taste along with a small amount of water to help the vegetables cook. Mix again to combine all the ingredients.

  6. Cover and Cook: Cover the pan with a lid and allow it to cook for 10 to 12 minutes on medium heat. This will soften the potatoes and other vegetables.

  7. Add More Vegetables: After the initial cooking time, add the chopped eggplants and carrots to the pan. Stir to combine and add 1 to 2 tablespoons of water if necessary to prevent sticking.

  8. Final Cooking: Cook the mixture until all the vegetables are tender and cooked through, which should take an additional 5 to 10 minutes.

  9. Finish with Nutty Flavors: Once the vegetables are cooked, stir in the washed plums, sesame powder, and roasted peanut powder. Allow this to cook for an additional 2 to 3 minutes, mixing well.

  10. Add Freshness: After the bhaji is cooked, remove it from heat and drizzle the lemon juice over it. Garnish with fresh coriander leaves for added flavor and color.

  11. Serve: Serve the Bhogichi Bhaji hot alongside Khandeshi Dal and warm Phulka for a delightful meal that is sure to please your family and friends.
