Dairy-Free Balsamic Strawberry Ice Cream

Corn flour or arrowroot powder 1 tablespoon
Vanilla Extract 1 teaspoon
Coconut milk (thick) 1 cup

Instructions:

  1. Prepare the Strawberry Mixture:
    Begin by adding the balsamic vinegar, 1/2 cup of maple syrup (or honey if using), and the arrowroot powder into a bowl. Whisk until the mixture is smooth, ensuring no lumps remain. Combine this smooth mixture with the chopped strawberries in a saucepan. Heat over medium flame and cook for about 8 minutes, stirring occasionally until the strawberries break down and become mushy, with a bubbly consistency. Once the mixture is cooked, remove it from the heat and allow it to cool completely.

  2. Prepare the Cashews:
    While the strawberry mixture is cooling, drain the soaked cashew nuts to remove any excess water.

  3. Blend the Ingredients:
    In a blender, combine the drained cashews, the remaining 1/2 cup of maple syrup (or honey), a pinch of salt, 1 cup of thick coconut milk, and the cooled strawberry mixture. Blend everything until smooth and creamy. You may need to blend in batches, depending on the size of your blender.

  4. Chill the Mixture:
    Once blended, pour the creamy mixture into a container. Cover the container with cling wrap to prevent ice crystals from forming and place it in the freezer. Allow the mixture to chill overnight for the best texture.

  5. Serve:
